Add a "last contacted" property
Add a build-in property on all users with the last contacted time, based on all communications going from AP (or if data is sent to that property and overrides the automatic input).
Could be helpful when users are in multiple journeys at the time time and there are potentially many delivery time conflicts.

Bare-bonez but can do:
Add 2 custom fields: LastActivityDate, LastActivityType
Add new Journey
Trigger: "Sent any email" -> Update Field "LastActivityDate = --today--, LastActivityType "Sent Email" or whatever you like
Rinse/Repeat adding additional triggers for "Opened","Clicked","Replied",etc 'any email' -

You can create a field called last email sent. Just set up a journey that's triggered on email status sent, then update that field with today's date, using this: --today--
You could also create a field that has # of emails sent, and just update that +1 every time an email is sent. Put a time limit on it and you can also see how many emails are sent each month.
