customize which email activity (open, clicks, unbounced, unsubscribed) shows up on my Salesforce Activity History
Our client's activity history on Salesforce is cluttered with email information that our team doesn't need - was sent email / opened email / unbounced email, this makes it hard for them to access the emails that really matter, where they personally speak with the customers. There should be an option to only show for example the activity related with clicks or unsubscribes.

I agree. It would be helpful to specify which activity (opens, clicks, unsubs) is brought over as part of the sync. We have some Accounts in SF that have several records which means the Activity History can get very cluttered.

You can do that already. Don't sync the data, use the "add task" journey action to add a task when the user clicks or unsubscribes.
