It would be good to be able to use a Messaging Service instead of just a number from Twilio. This gives SMS much more credibility and increases responses.
There is a workaround which can be used, adding a contact to a list, then having Zapier pick it up, and from there send Twilio SMS with Alphanumeric Sender ID.

In Twilio this is called Alpha Sender ID, and is available in selected countries.
If you have configured a Messaging Service in Twilio to use Alpha Sender ID it can be used through their API
